Hot water extraction may be needed if it's very greasy. HWE is still the best way to flush massive amounts of crud from a carpet.
However if you have the restaurant in a manageable condition, Encap-Punch and Encap-Clean DS2 would be the best detergent option for encapping. Pre-spray with Encap-Punch, allow a little dwell time. Then perform encap shampooing with the Vario in shampoo/showerfeed mode using Encap-Clean DS2 and a FiberPlus pad. If you would like to pull up some additional soil during the initial cleaning, you could then run back over the carpet with a bonnet on the Vario in bonnet/spray mode.
One of the nice things about the Vario is the versatility of moving between straight encap shampooing and bonnet cleaning. You can quickly switch between the two methods by simply opening or closing the valves on the handle. It makes it easy to switch between both low moisture cleaning methods on the fly.
